Korean BBQ Burgers

Ingredients

4 Leave(s) lettuce
4 Slice(s) vegan cheese
0.5 cucumber, cut into thin strips
2 scallions (spring onions), cut into fine rings
2 tomatoes, cut into fine rings

For the burger sauce:

6 ts brown sugar
2 ts O’Food gochujang paste
2 cloves of garlic, finely chopped
1 cm ginger, peeled and thinly sliced with a mandoline

Preparation

1. Start by preparing all the burger toppings.
2. For the sauce, add all the ingredients to a saucepan and allow to simmer gently until you have a syrupy consistency. Take off the hob and set aside.
3. Fry the “Like Chicken” fillets in a pan with oil, on both sides.
4. Place the vegan cheese slices on the fillets, put the lid on the pan, and cook until the cheese has melted.
5. Then fry the inside of the burger buns in the same pan until they are nice and golden brown.
6. Now assemble the burgers: spread a little Sriracha sauce on the lower half of each burger bun. Place a lettuce leaf and a tomato slice on each. Add the fillets, cucumbers and scallions. Add some of the gochujang burger sauce, and place the top half of the burger bun on top.
7. Serve with kimchi.
