Like Chicken Ramen Burger

Ingredients

3 king oyster mushrooms
Some olive oil
Some pak choi
1 tb soy sauce
125 g ramen (or mie) noodles, raw
optional: vegan egg substitute for 1 egg
3 tb tahini
1 ts agave syrup
1 Handful lamb's lettuce
Some sesame seeds for garnish

Preparation

1. Slice three king oyster mushrooms and score in a criss-cross pattern. Sauté the mushrooms in oil and season with salt. Briefly toss the large leaves of two pak choi in the pan with a splash of soya sauce.
2. Cook 125 g dried ramen noodles (or mie noodles) according to the instructions on the packet and then leave to dry for a bit on a kitchen towel (optionally, the noodles can be whisked with a little egg substitute to help them keep their shape when frying - but they can also be cooked without).
3. Place the ramen (or mie) noodles, as a substitute to the classic burger bun, in a round, heat-resistant mould (e.g. 10 cm diameter round cookie cutter) open at the top and bottom and fry in oil on both sides until golden brown.
4. Prepare the Like Chicken Burger according to the instructions on the packet. For the sauce, mix together the miso paste, tahini (or other white sesame paste), agave syrup, soya sauce and 1 tbsp water.
5. Serve with a small handful of lamb's lettuce and some black sesame seeds
