Vegan Salade Niçoise

Ingredients

For the salad:

4 Handful leafy greens of your choice (we recommend mesclun or romaine hearts)
400 g potatoes
200 g green beans
200 g tomatoes
1 red onion
50 g olives, stoned or pitted
1 Handful cauliflower florets
2 tb fresh chives

For the dressing:

1 tb white wine vinegar
1 tb quince jelly
1 Lemon, juiced
Salt and pepper

Preparation

1. For the dressing, mix all the ingredients together until you have a homogeneous liquid. Set aside.
2. Cook the potatoes in salted water for about 15 minutes. Drain and cut into bite-sized pieces. Keep the cooking water.
3. Blanch the beans and cauliflower in the potato cooking water for 2-10 minutes. Drain and halve.
4. Chop the onions, tomatoes and chives.
5. Mix all the ingredients together. Add the tuna substitute and serve with the dressing.
