Vegan Salade Niçoise
Ingredients
For the salad:

tuna substitute

Handful
leafy greens of your choice (we recommend mesclun or romaine hearts)

potatoes

green beans

tomatoes

red onion

olives, stoned or pitted

cauliflower florets

fresh chives
For the dressing:

tb
olive oil
1
tb
white wine vinegar
1
tb
quince jelly
1
tb
Dijon mustard
1
Lemon, juiced
Salt and pepper
Preparation
1. For the dressing, mix all the ingredients together until you have a homogeneous liquid. Set aside.
2. Cook the potatoes in salted water for about 15 minutes. Drain and cut into bite-sized pieces. Keep the cooking water.
3. Blanch the beans and cauliflower in the potato cooking water for 2-10 minutes. Drain and halve.
4. Chop the onions, tomatoes and chives.
5. Mix all the ingredients together. Add the tuna substitute and serve with the dressing.
