Greek One-Pot Pasta

kritharaki orzo

black olives

red onion

fresh spinach

vegan feta substitute

olive oil
Some
oregano to garnish

salt and pepper
Preparation
1. Peel the red onion, cut in half and cut into thin slices. Peel the garlic cloves and cut into little slices. Quarter the cherry tomatoes and cut the feta substitute into small cubes. Then cut the olives in half.
2. Heat olive oil in a large pan and fry the onions and tomato purée in it for about 3 minutes.
3. Add spices and simmer covered on a low heat for about 15 minutes until the pasta is cooked. Then add the feta substitute and spinach and simmer gently for 1-2 minutes.
4. Garnish with fresh oregano and serve.
