Anne Mendens vegan Mac Cheesy-Style

Preparation
1. Soak the cashews in hot water for about 1 hour.
2. Chop the potatoes (unpeeled), onions and carrots into small chunks.
3. Bring lightly salted water to the boil in a saucepan and cook the potatoes, onions and carrots for about 10 minutes.
4. In a saucepan of lightly salted water, cook the macaroni.
5. While the pasta is cooking, mix the soaked cashews with the potatoes, carrots, onions, garlic, lemon juice, yeast flakes, mustard, turmeric and 150 millilitres of boiled water in a blender until creamy. Season with salt and pepper.
6. Drain the pasta and serve together on a plate. Have fun cooking and enjoy! Love, Anne Menden!
