Mixed Grilled Vegetables

Ingredients

10 pc small potatoes, cooked and halved
1 pc large green bell pepper, sliced into strips
1 pc large red bell pepper, sliced into strips
100 g mushrooms, halved
1 pc medium-sized onion, diced into rings
2 pc garlic clove
Some parsley, fresh
1 pc lime, juice freshly pressed
Some olive oil
Some salt

Preparation

1. In a large pan, heat some olive oil and sauté onions, garlic, mushrooms, and bell peppers for 3-4 minutes until they turn golden brown.
2. Add cooked potatoes and parsley, season with salt and red pepper, and sauté for a few more minutes.
3. Add lemon juice, remove from heat, and sprinkle grated Violife Greek White cheese on top.
4. Transfer the vegetable mixture to a baking sheet and bake in the preheated oven at 240°C for about 10 minutes.
