New-Meat* Thai Stir Fry

Ingredients

*Free from animal products

40 ml sunflower oil
3 cloves of garlic, roughly chopped
2 broccoli, peeled and diced
2 red chillies, sliced
1 small aubergine, cut into small cubes
2 tb mushroom or soya sauce
Some basil leaves
1 tb cashew nuts, roasted
steamed rice to serve

Preparation

1. Heat the oil in a wok or large frying pan over a high heat. Put the Redefine Pulled Beef in the hot oil and stir-fry for about 5-9 minutes until browned. Follow the cooking instructions on the label.
2. Add the garlic and fry for one minute, stirring constantly.
3. Add the aubergine, broccoli and chilli and fry for a further minute. Stir in the NoFish and mushroom or soya sauce.
4. Cover the wok or pan and cook for 2-3 minutes until the aubergine is soft.
5. Remove the lid and stir in the basil.
6. Remove from the heat and sprinkle with the chopped, roasted cashew nuts. Serve with steamed rice. Enjoy your meal!
