Turkish One-Pot Rice with Spinach and Vegan Mince

Preparation
1. For this Turkish one-pot rice dish, start by sorting the spinach leaves and washing them. Then chop roughly. Peel the onions and garlic, then dice.
2. Melt the alternative to butter in a very large saucepan. Fry the onions and garlic cubes until clear.
3. Add the vegan alternative to mince and the salt and pepper, and start to fry until you have fine crumbs.
4. Add the chopped spinach, and allow it to wilt. Add 1/4 liter of water, the rice, paprika, lemon juice and zest. Season with salt and pepper.
5. Cook everything with the lid on, over a low heat for 30 minutes, until the rice is soft. Stir several times. Add more water if needed.
6. Stir the alternative to yogurt until smooth, and spoon onto the spinach when serving.
