Vegan Hamburg Labskaus

beetroot (freshly cooked and peeled or vacuum-packed)

Preparation
1. Boil the potatoes in salted water and peel.
2. Blend the beetroot with the gherkins in a blender.
3. Mash the potatoes with the broth, the pickled gherkin stock and margarine in a saucepan. Add the beetroot mixture and bring to the boil, stirring continuously. Allow to simmer for about 5 minutes until the mixture has a creamy consistency.
4. Season the vegetable Labskaus with the seasonings. Use the smoked salt sparingly.
5. Garnish with gherkins, potatoes and possibly a small salad bouquet. Enjoy this Hamburg speciality vegan-style – delicious!
