Wheaty Eggplant Rolls

Ingredients

Some salt
2 pc eggplants
Some olive oil
100 g arugula
Some onion rings
Some pepperoni for garnish
6 small wooden skewers

Preparation

1. Wash the eggplant and slice it lengthwise into approximately 5-8 mm thick slices. Sprinkle both sides with salt and let them sit for about 10 minutes. Rinse the slices and pat them dry. Top the eggplant slices with Wheaty Vegan Slices Salami and roll them up. Secure them with wooden toothpicks.
2. Sear briefly all around in hot olive oil or grill. Then serve garnished with arugula, onion rings, and chili peppers.
