Mini Vegetable Pizzas

medium-sized eggplants, sliced

medium-sized zucchini, sliced
Some
basil, fresh
Some
tomato sauce
Some
olive oil
Some
salt & pepper
Preparation
1. Preheat the oven to 220°C. Place slices of eggplant and zucchini on the baking paper. Drizzle with some olive oil, season with salt and freshly ground pepper, and bake for 5 minutes until they become soft.
2. Remove the baking sheet from the oven, top with tomato sauce and basil leaves, and sprinkle with vegan alternative to grated cheese.
3. Return it to the oven and bake for another 8-10 minutes.
