Peperoni-Zucchini-Tortizza

Preparation
1. Preheat the oven to 200°C.
2. Slice the peppers and red onion into thin strips and the courgette into rings.
3. Place the tortillas on a baking tray lined with baking paper and spread with the pizza sauce. Spread the peperoni and vegetables on top and sprinkle with the cheese alternative.
4. Bake the tortillas in the oven for 8-10 minutes until they are crisp and the cheese has melted.
5. Top with the rocket.
