Vegan Alternative to Tuna Pizza

Preparation
1. Mix flour, dry yeast, salt and a pinch of sugar. Add hand-hot water and knead into a firm dough, using the dough hook. Add olive oil and keep kneading until the dough is smooth, then rest 30-40 minutes covered in a warm place.
2. Finely dice bell peppers, as well as the vine tomatoes and onions. Gently fry the vegetables in a pan with olive oil, add bay leaf and sauté over medium heat until a sauce like consistency is reached. Season to taste with salt, pepper and oregano.
3. Sprinkle the dough with flour and gently stretch to baking tray size. Put on a baking tray lined with baking paper.
4. Cut onions to rings and dunk in a mixture of olive oil and vegetable stock powder. Tear vegan alternative to tuna into fine pieces. Sprinkle replacement to tuna, onion rings and sauce all over the dough. Season with pizza spice mixture and bake at 180 °C. Sprinkle with freshly chopped spring onion just before serving.
