King Oyster Mushroom Risotto

king oyster mushroom

herbs, fresh

soy sauce

salt & pepper
Preparation
1. Melt oil/margarine in a pot and sauté the diced shallots. Then, add the rice and wait until it becomes translucent as well. Deglaze with white wine and broth, and let it simmer while stirring.
2. Add the coarsely chopped oyster mushrooms and a small piece of 'Smoked Pepper' Happy Cashew, crushed with a fork, and fold them in shortly before the end.
3. Season with fresh herbs, soy sauce, and pepper to taste. For extra flavor, you can also add a spoonful of cashew cream if desired.
