Rocket salad with Prosociano

Ingredients

For the salad:

2 Bunch(es) rocket, washed, dried and chopped
4 pc dried tomatoes
Some pumpkin seeds, sultanas, cranberries

For the vinaigrette:

0.5 Cup(s) olive oil
0.25 Cup(s) balsamic vinegar
1 ts mustard, mild
Some salt and freshly ground pepper

Preparation

1. For the vinaigrette: Combine olive oil, balsamic vinegar, an alternative to honey, mustard, salt and black pepper in a jar with a lid. Put the lid on and shake vigorously until everything is well mixed.
2. In a large bowl, mix the wild rocket, sun-dried tomatoes, pumpkin seeds, sultanas and cranberries with the grated Violife Prosociano. Pour over the vinaigrette just before serving to keep the salad fresh.
