Ingenious Trend: Chopped Sandwich

Ingredients

For the sandwich:

4 ciabattas
1 red onion
0.25 iceberg lettuce or swiss chard
4 medium-sized yellow tomatoes
4 pickled chillies
3 tb chickpeas, cooked

For the pesto:

1 garlic clove
1 Handful basil sprigs
1 organic lemon
200 g pistachios
50 ml water
100 ml olive oil
1 Splash(es) balsamic glaze

Preparation

1. For the pesto, peel the garlic. Wash and dry the basil and roughly chop with the garlic. Zest a lemon. Puree all the ingredients in a tall container and season the pesto with salt and pepper.
2. Wash the lettuce and tomatoes, peel the onions and drain the chillies and chickpeas.
3. Place all the sandwich ingredients on top of each other on a chopping board and chop finely with a large kitchen knife, mixing them together.
4. Spread the pesto on top and mix thoroughly.
5. Cut the ciabatta lengthways into 2 halves and cover one half with the salad mix. Drizzle some balsamic glaze on top, cover with the baguette lid and enjoy.
