Pea Soup with New Meat* Sausage

Ingredients

*Free from animal products

250 g dried peas
2 l water
1 tb salt
1 bay leaf
1 Sprig(s) sprig of thyme
1 starchy potato, diced
1 onion, finely chopped
1 leek, sliced
300 g carrots, diced
300 g celeriac, cut into strips

Preparation

1. Prepare the soup: Soak the dried peas in water for 8 hours and then drain.
2. Bring the soaked peas, water, salt and thyme to the boil in a large pan. Simmer for 20 minutes, stirring regularly and scraping the bottom of the pan.
3. Add the potato and vegetables to the pan and leave the soup to simmer gently for a further 20 minutes. Stir the soup well to thicken it with the peas.
4. Prepare the sausages: Pour the oil into a pan and heat over a medium-high heat. Place the sausages in the pan and fry for 10 minutes until cooked through. Turn several times during frying until nicely browned.
5. Slice the fried sausages and add to the soup. Simmer gently for 10-15 minutes.
6. Season with salt and pepper. Serve the pea soup in large bowls with rye bread. Enjoy your meal!
