Pad Thai with Like Chicken

Ingredients

1 Pack(s) Like Chicken
150 g wide rice noodles

For the pad thai sauce

2 tb tamarind paste
50 ml water
2 tb sugar
2 tb soy sauce
1 Leave(s) sheet of nori seaweed
2 tb sesame oil for frying
2 cloves of garlic, chopped
100 g bean sprouts
2 carrots, cut into julienne sticks (like matchsticks)
2 spring onions, finely sliced
1 lime, juice and zest

To garnish

1 lime, cut into wedges
1 Handful handful of coriander leaves, roughly chopped
1 fresh red chilli pepper, finely chopped
1 Handful handful of salted, roasted peanuts, roughly chopped

Preparation

1. Boil the rice noodles according to the packet instructions until al dente and rinse with cold water.
2. For the pad thai sauce, add the nori sheet to the water. Leave to stand for a few minutes, then place all the ingredients, including the water/nori sheet, in a tall hand blender and blend until everything is well combined.
3. Heat a wok pan and add the sesame oil. Add the vegan Like chicken pieces and stir-fry for about 3 minutes until golden brown. Add the garlic and stir.
4. Add the prepared bean sprouts, carrots and spring onions to the pan and fry for about 1 minute.
5. Now add the rice noodles and pad thai sauce and heat through.
6. Add the lime zest and juice and season to taste, adding more soy sauce if necessary.
7. Serve with plenty of coriander, lime wedges, peanuts and chilli.
