There was a time when chocolate was dark, hard and brittle. Hard times indeed. That was until one Friday night in 1879 when the Swiss Rudolph Lindt forgot to switch off the conching machine in his confectionery. The machine continued to stir the entire weekend, and the chocolate that Lindt discovered on Monday was more deliciously smooth than ever before… the start of a chocolate revolution. From then on, all chocolatiers wanted to achieve the same creamy, melt-in-the-mouth chocolate texture.
