Preparation
1. Chop the spring onion into fine rings. Mix the plant-based mayonnaise and gochujang into a creamy paste.
2. Spread one side of the bread with vegan butter and the other side with the paste. Top with Simply V cheese alternative, kimchi and three-quarters of the spring onion rings.
3. Cook the sandwiches in a frying pan over a medium heat for about 4 minutes on each side until crisp.
4. Sprinkle the bread with sesame seeds, the remaining spring onion rings and a little sea salt.
