The plant based magic ingredient

Agar agar is a plant-based gelling agent obtained from red algae. This substance has established itself in vegan cuisine as a popular alternative to animal gelatine products. For vegans who want to avoid animal products, agar agar is a versatile and effective way of gelling food.

In contrast to gelatine, which is made from animal collagens, agar agar is obtained by extraction from red algae, in particular various species of the genus Gelidium and Gracilaria. These algae are mainly cultivated in Asian countries, but also in other regions of the world.

Agar agar has the remarkable property of gelling at room temperature, which makes it an extremely effective thickening and gelling agent. It is widely used in the preparation of desserts, jellies, puddings, jams and other sweets. In addition, agar agar is also used in savory dishes, for example in the preparation of vegetarian or vegan aspic dishes.

Dosage:

1 heaped teaspoon (3.5 g) corresponds to approx. 6 sheets of gelatine and gels 500 ml of liquid. Adjust the dosage depending on the desired firmness.

Preparation for warm mass:
Stir 3.5 g agar agar with 100 ml liquid until smooth. Then stir into the remaining liquid and simmer gently for 2 minutes while stirring. Then leave to gel in the fridge for 3 hours.
Preparation for cold dishes:
Stir 3.5 g agar agar into 100 ml liquid until smooth and simmer gently for 1 minute while stirring. Allow to cool slightly, then gradually add the cold ingredients and stir in. Leave to gel in the fridge for 3 hours.
